2021 The Chosen One Graduates Mataro

As part of our University course  we were given the assignment to produce a straight Mataro. The Mataro team comprised of Angela, Tunakan, Ben, Matt and myself. The Mataro grape was sourced from the Coombe vineyard located at the Adelaide University – Waite Campus Urrbrae. After the completion and presentation of the Mataro wine to the lecturer and fellow students, I thought it was so good, I decided to purchase the 2 barrels. I have nurtured the wine for a year and tried a number of other small varieties to improve the taste and structure. I final decided to go with a small quantity of Petit Verdot. This is used in classic Bordeaux blends. It is highly sort after due to its plentiful colour, tannin and black cherry, plum, viloet and sage taste profile. A full bodied, dry and medium plus acidity. This complimented the Mataro and improved the taste and structure. I also allowed the Mataro with a touch of Petit Verdot to mature in American Oak for 12 months. The colour is deep ruby and the nose exhibits aromas of berries, plum, mulberry and herbal notes. The palate opens up to a smooth mouth-feel that has plush tannins and good length. A mixture of berry fruits, vanilla and spice are present.
